It’s not the sensitivity, it’s the thrust lag. When you throttle up there is a small lag between throttle input and the increase of thrust.
It takes a bit of practice to get used to.
You need to work with the throttle to stay on the boom, very small inputs.

-I can do a cold start with success 4 out of 5 times.
-I get a flat tire on landing only 3 times out of the 10!
-I can reach to “cleared to contact” when trying to refuel!
-and I have even more to dig out of my sleeve!!
Go with the low vis and you are good. The red paint is just there to prevent accidents during practice/ peace time.
The armament I’ve seen and know of is either 12 unguided rockets 6 on each wing in pairs on 3 pylons per wing or two Gun pods on the middle pylon of each wing.
Iirc it was just drivers, no other software, and I use dx only too, take a look at their website.
I had the mfd issue when I updated to win10, but I downloaded the latest drivers and the problem stopped for me.

Demo, you need to put in a personal attack or two or three sooner with a warning from a mod that the thread will be closed if it happen again. Your list has waay too much constructive discussion to resemble RL 
If I remember correct, there is a setting, morph… something that make the fonts/text look different, see if that is on.
