For an even cheaper alternative that requires no assembly at all (or the danger of mangling yourself operating heavy machinery :)) I simply use two small foldable deck / garden tables that stow away easily when not using them. I use a couple of large, thick bird identification volumes to raise the stick / throttle level to where it’s comfortable and this “solution” is surprisingly stable. You can also use some cut-to-fit anti-slip mat (normally used for laying out your car boot / trunk with it) underneath the throttle and stick to improve the stability even further.
