Hypothetically speaking, what would happen if I made a helicopter flyable, and then took over control of an AI one that was in flight?

Would depend in some part on how you make the heli flyable, I suppose? Advanced flight model or simplified controls, for example…
Based on F-16 inflight joining, however, I’d say: moving forward wings level but throttle idle. Due to lack of power, you’re losing altitude. Not really significant in a fixed wing aircraft at medium altitude, potentially quite problematic in a rotary wing aircraft at low altitude, with potential to unnecessarily stress/lose control of/damage the helicopter by overcorrecting throttle (torque). Also no trim, so asymmetric loads could pull you in a certain direction, although that may be less of a factor on helicopters.(?)
I could very easily see these items possibly catching someone off-guard upon entering, especially if some lag is involved, so would require particular attention to make sure you don’t crash within a minute after entering 3D.

I think it was imposible to enter 3D with heli in all Falcon versions.
That is why, I did helis useing propeler FM. These are flyable by human and have no problems with AI.

BMS will crash.
That happened in earlier versions at least. It’s no fixed wing, it’s a target and as such, you can’t fly it No seriously, there were some troubles with the FM (flight model) for example. BMS just isn’t made for this and there seems to be some magic switch in the code saying “fixed wing” -> go this way or “helicopter” -> go that way. Helicopters can only be flown by the AI.
I don’t know if they have any FM at all or just do have some kind of “rotary wing dummy FM” hardcoded to it. -
By human error, fooling around, I was able to join a “AH-1 Cobra” in POH theatre.
It was AI controlled, and the visual POV was turned 90º to the Right… It was weird… but there I was. As I said, no control… just a hell of a ride in low level, looking sideways.
I tested long a go a supposed working trick that, changing your pilot name in the logbook, allowed you to “fly” helos… It never worked for me.

You haven’t seen anything until you’ve seen my try to fly the ARMA 3 Advanced Flight model. 100% Fireball, guaranteed.
That is why, I did helis useing propeler FM. These are flyable by human and have no problems with AI.
This is interesting. What I am thinking here is that I can spawn a Helo in ARMA 3 and track it’s movements, and then put a headless client on another machine in the cockpit, that would apply those movements to the Helicopter in game. When the Helicopter is then destroyed on the Falcon side (by a Falcon pilot!) I can destroy the Helicopter in game. Same principal can already be applied to Jets, and by forcing the pilot to eject (at least in a single seat) I could likewise destroy an Aircraft in Falcon from Ground Fire in ARMA 3.

IIRC there are two usefull FMs in Falcon already: An-2 and OV-1
I have used An-2 for heavier helis (like Seahawk or Ka-29 on the pict) and OV-1 for lite choppers or rotary drones…
You can see, they yaw realisticaly…they do not jump or make crazy movement like default helis in Falcon…the only problem is, they “eat” some runway - that is why, I use 2d takeoffs for them usually (from ships, special army bases or grass airfields). Landings are ok in Falcon - they can sustain 30 kts only on Flaps.

I don’t really care about either one of those things, I didn’t think about spawning them in or out though, that’s going to be a problem.
