Just one comment, I’m a bit concerned by the diedral angle of the canard than seems largely positive (I know it’s the one from the blueprint you have started from), it does’nt seems to be the case on pictures of the actual bird.
On the 3Dview available on DASSAULT AVIATION website, this angle is null.

Fixed to +5 deg.
After checking some data I’ve at office, I’m a bit more assertive: RL Rafale’s canard diedral angle is very close to 0 deg (much less than 1 in fact).
BTW, I do not know how you will manage Canard position (Rafale’s canard are not the pitch angle driver, pitch angle is commanded by elevon), in RL canard orientation is most of the time (means except for take-off, landing and when air-brakes are extended) the opposite of the a/c AoA (means if a/c AoA is 0, canard are aligned with the fuselage, if a/c AoA is +20deg, canard are oriented -20deg, or at least close to), this may need a new DOF, and surely some code modification, but I would guess you will find some support to do that.
And last, do not worry about FM, there will be a way to do something not too ridiculous. -

DOF could be as simple as reversing the travel direction (i.e. negative DOF with positive stick input).

It is clear that canard diedhreal is close to zero
It seems also that the upper part of the fuselage around canards and aft is wrong , in real it is not that massive, here it looks like a mig29 shape…

You see on the fuselage on top, you don’t have a continuous straight edge from canard to nozzle, actually on the wing junction, the curve is concave
It makes the whole AC more slim
IMHO some work needed here
