Regarding the MFDServer App if your Kindles are Kindle Fire it might be worth a try. As the Tablet is available as .apk it should be possible to install it on a Kindle Fire.
The MFDServer App would even allow to use multiple Tablets. So one in ICP and the other in MFD mode. But as I said the connection between the computer running BMS and the Tablet is trough network MFD might lag behind.
Another use for tablets might be to set them up as secondary USB monitors through 3rd party apps like DuetDisplay. But I haven’t found a working solution to use a tablet as additional monitor with working touch function.
Therefore I personally went for the display extraction for the 7" HDMI/USB touchscreen which are usually applied to RasverryPi but work on Windows as well
